Creative Drunken Noodles

Ingredients

  • 3 portions wide rice noodles
  • 9 tablespoons soy sauce
  • 4 tablespoons vegan teriyaki sauce
  • 3 tablespoons vegan fish sauce
  • 2 tablespoons maple syrup
  • 3 tablespoons sesame oil
  • 2 shallots
  • 4 garlic cloves
  • 7 pickled jalapeños
  • 4 spring onions
  • 1 zucchini
  • 1 red paprika
  • 2 carrots
  • 2 handfuls fresh basil
  • Pepper

Preparation

  1. Cook the rice noodles according to the package instructions.

  2. Chop all the vegetables.

  3. Heat up oil in a pan.

  4. Add the shallots, garlic, jalapeños, and spring onions to the pan.

  5. Sauté until golden.

  6. Add the chopped zucchini and paprika, and cook for about five minutes.

  7. Pour in the soy sauce, vegan teriyaki sauce, vegan fish sauce, maple syrup, and sesame oil. Season with pepper.

  8. Stir in the cooked rice noodles and carrots.

  9. Cook for another five minutes, allowing the flavors to blend.

  10. Mix in the fresh basil.

  11. Serve with additional basil on top.
