Hearty Blueberry Oatmeal Delight
Ingredients
- Quick oats - 1 Cup
- Almond flour - 1/4 cup
- Coconut flour - 1/3 cup
- Cane sugar - 1/3 cup (plus extra for sprinkling on top)
- Cardamom powder - 1/2 tsp
- Blueberries - 1 1/2 cups (Frozen or fresh)
- Chopped blanched almonds
- Coconut milk or any plant-based milk - 1 1/2 cups
Preparation
Preheat your oven to 180°C (350°F).
In a mixing bowl, combine the quick oats, almond flour, coconut flour, cane sugar, and cardamom powder.
Mix all the dry ingredients together until well combined.
Stir in 1 1/2 cups of blueberries into the dry mixture. This can be either frozen or fresh blueberries.
Add the chopped blanched almonds to the mixture.
Pour in 1 1/2 cups of coconut milk or any plant-based milk of your choice.
Mix all the ingredients in the bowl until everything is well combined.
Transfer the mixture into a prepared baking dish.
Add additional blueberries on top of the mixture in the baking dish.
Sprinkle some cane sugar over the top layer for a caramelized look.
Bake in the preheated oven at 180°C (350°F) for about 10 minutes.
Once baked, serve the blueberry oatmeal with your favorite coconut cream or any preferred topping.
