Hearty Blueberry Oatmeal Delight

Ingredients

  • Quick oats - 1 Cup
  • Almond flour - 1/4 cup
  • Coconut flour - 1/3 cup
  • Cane sugar - 1/3 cup (plus extra for sprinkling on top)
  • Cardamom powder - 1/2 tsp
  • Blueberries - 1 1/2 cups (Frozen or fresh)
  • Chopped blanched almonds
  • Coconut milk or any plant-based milk - 1 1/2 cups

Preparation

  1. Preheat your oven to 180°C (350°F).

  2. In a mixing bowl, combine the quick oats, almond flour, coconut flour, cane sugar, and cardamom powder.

  3. Mix all the dry ingredients together until well combined.

  4. Stir in 1 1/2 cups of blueberries into the dry mixture. This can be either frozen or fresh blueberries.

  5. Add the chopped blanched almonds to the mixture.

  6. Pour in 1 1/2 cups of coconut milk or any plant-based milk of your choice.

  7. Mix all the ingredients in the bowl until everything is well combined.

  8. Transfer the mixture into a prepared baking dish.

  9. Add additional blueberries on top of the mixture in the baking dish.

  10. Sprinkle some cane sugar over the top layer for a caramelized look.

  11. Bake in the preheated oven at 180°C (350°F) for about 10 minutes.

  12. Once baked, serve the blueberry oatmeal with your favorite coconut cream or any preferred topping.
