Quick and Easy Low Fat Mini Red Velvet Cake

Ingredients

  • 50g (1/3 cup or 2 oz) self-raising flour (or all-purpose with an extra pinch of baking powder)
  • 1 heaped tbsp low-fat dairy-free margarine
  • 2 tbsp sugar/maple/golden syrup or sweetener
  • 1 tsp baking powder
  • 3 tbsp milk (such as almond milk)
  • 1 tsp cocoa powder
  • Drop of red food coloring paste

Preparation

  1. Put everything into a large bowl and mix until smooth.

  2. Pour the mixture into a microwaveable bowl and microwave on high for 2 minutes.

  3. Once cooked, add a dollop of yogurt, cream cheese, or ice cream on top and enjoy straight away.
