Quick and Easy Low Fat Mini Red Velvet Cake
Ingredients
- 50g (1/3 cup or 2 oz) self-raising flour (or all-purpose with an extra pinch of baking powder)
- 1 heaped tbsp low-fat dairy-free margarine
- 2 tbsp sugar/maple/golden syrup or sweetener
- 1 tsp baking powder
- 3 tbsp milk (such as almond milk)
- 1 tsp cocoa powder
- Drop of red food coloring paste
Preparation
Put everything into a large bowl and mix until smooth.
Pour the mixture into a microwaveable bowl and microwave on high for 2 minutes.
Once cooked, add a dollop of yogurt, cream cheese, or ice cream on top and enjoy straight away.
