Quick Mediterranean-Style Chickpea Salad
Ingredients
- 1 can of Chickpeas
- 8oz Cherry Tomatoes
- 1 Medium Zucchini
- 1/2 White Onion
- 2 tbsp Extra Virgin Olive Oil
- 1/4 cup Fresh Parsley
- 1/4 cup Lemon Juice
- 1 tsp Za’atar Seasoning
- Salt & Pepper to taste
- Dolmas (optional)
Preparation
Open can of chickpeas, drain and rinse.
Dice zucchini, onion, and cut cherry tomatoes in half.
Turn a pan on medium heat and sauté onions in a tad bit of olive oil. Next, add zucchini and sauté for 5-6 minutes.
Add chickpeas along with za’atar, salt, pepper, and parsley. Cook for 5 minutes.
Turn off heat. Add cherry tomatoes, 2 tbsp olive oil, lemon juice, and olive oil. Mix well.
Serve with dolmas and add more fresh parsley!
