Quick Mediterranean-Style Chickpea Salad

Ingredients

  • 1 can of Chickpeas
  • 8oz Cherry Tomatoes
  • 1 Medium Zucchini
  • 1/2 White Onion
  • 2 tbsp Extra Virgin Olive Oil
  • 1/4 cup Fresh Parsley
  • 1/4 cup Lemon Juice
  • 1 tsp Za’atar Seasoning
  • Salt & Pepper to taste
  • Dolmas (optional)

Preparation

  1. Open can of chickpeas, drain and rinse.

  2. Dice zucchini, onion, and cut cherry tomatoes in half.

  3. Turn a pan on medium heat and sauté onions in a tad bit of olive oil. Next, add zucchini and sauté for 5-6 minutes.

  4. Add chickpeas along with za’atar, salt, pepper, and parsley. Cook for 5 minutes.

  5. Turn off heat. Add cherry tomatoes, 2 tbsp olive oil, lemon juice, and olive oil. Mix well.

  6. Serve with dolmas and add more fresh parsley!
