Wholesome Green Lentil and Root Vegetable Stew
Ingredients
- 300ml Green lentils (approximately 1 1/4 cup)
- 1 medium sweet potato
- 2 turnips
- 500ml water
- 1 tsp dried oregano
- 1 tsp dried thyme
- 2 minced garlic cloves or garlic powder
- 2 tsp Japanese soy sauce
- 1 tbsp vegetable fond (concentrated stock)
- Salt & pepper
Toppings
- Crispy fried tofu
- Asparagus
- Tomatoes
- Avocado
Optional Dressing
- Vegan garlic dressing or thyme and garlic dressing (using mayonnaise/vegan creme fraiche or cashews as the base)
Preparation
Rinse the lentils.
Peel and dice the sweet potato and turnips into small pieces. Add them to a pot with the lentils and water. Let it simmer for 10 minutes.
Add salt, pepper, thyme, oregano, soy sauce, and vegetable fond. Continue to simmer for another 10-15 minutes until soft and fully cooked.
Meanwhile, fry the tofu and asparagus in a generous amount of oil. Optionally, make a garlic dressing or coat the tofu in cornstarch for crispiness.
Once everything is done, combine the lentil and root vegetable mixture with the fried tofu and asparagus. Add tomatoes and avocado.
Mix together a vegan garlic dressing or a thyme and garlic dressing.
