Flavorful Green Lentils with Roasted Veggies and Hummus

Ingredients

  • Approximately 350ml Green lentils (exact weight unknown)
  • Enough water to cover the green lentils
  • Optional: 1 vegetable stock cube
  • 2 tsp dried thyme (or use fresh)
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 medium sweet potato
  • 5 carrots
  • 3 turnips
  • 1-2 tbsp oil
  • Salt, pepper, cayenne pepper
  • Tomatoes
  • Hummus
  • Optional: Bread for serving

Preparation

  1. Rinse the green lentils and add them to a pot with enough water to cover them. Optionally, add a vegetable stock cube, dried thyme, onion powder, and garlic powder. Boil on medium heat for around 20 minutes or until the lentils are soft.

  2. Preheat the oven to 220°C. Peel and dice the sweet potatoes, carrots, and turnips into small cubes or slices. Place them on a baking tray lined with parchment paper. Drizzle with oil and season generously with salt, pepper, and cayenne pepper. Roast in the oven for around 25-30 minutes.

  3. If you don't have store-bought hummus, you can make your own using chickpeas, garlic, oil, water, lemon, salt, and tahini.

  4. Once the lentils and roasted veggies are done, mix them together. Add tomatoes, additional thyme, and garlic powder if desired.

  5. Serve the lentil and veggie mixture warm or cold, topped with hummus. Optionally, serve with bread or add chickpeas, tofu, salted nuts, or fresh thyme on top.
