Classic Brazilian Coconut Pudding
Ingredients
- 2 whole eggs
- 3 egg whites
- 200ml heavy cream (fresh)
- 200ml unsweetened coconut milk
- 1 cup shredded coconut (fresh)
- 1 cup powdered sweetener (erythritol)
Preparation
Blend all ingredients in a blender
Pour the mixture into a non-stick mold
Bake in a water bath for 1 hour
Let cool and then unmold

Let cool completely before unmolding for best results
