Classic Brazilian Coconut Pudding

Ingredients

  • 2 whole eggs
  • 3 egg whites
  • 200ml heavy cream (fresh)
  • 200ml unsweetened coconut milk
  • 1 cup shredded coconut (fresh)
  • 1 cup powdered sweetener (erythritol)

Preparation

  1. Blend all ingredients in a blender

  2. Pour the mixture into a non-stick mold

  3. Bake in a water bath for 1 hour

  4. Let cool and then unmold

Notes

  1. Let cool completely before unmolding for best results
