Brazilian Sweet Canjica Pudding
Ingredients
- 500 grams canjica
- 2 liters water
- 1 liter milk
- 1 cup sugar (180 grams)
- 8 cloves
- 1 cinnamon stick
- 1 can condensed milk (395 grams)
- 1 can heavy cream (200 grams)
- 50 to 100 grams shredded coconut
- 6 to 8 tablespoons powdered milk
- 5 to 6 paçocas
Preparation
Rinse the canjica under cold water.
In a large pot, combine canjica, water, cloves, and cinnamon stick. Bring to a boil, then reduce heat and simmer until canjica is tender, about 1-2 hours.
Add milk, sugar, condensed milk, and powdered milk. Stir well and continue simmering, stirring occasionally, until the mixture thickens.
Mix in shredded coconut and heavy cream. Cook for an additional 5-10 minutes until creamy and well combined.
Remove from heat. Crush paçocas and stir in or use as a topping before serving.
Tips
The cups referenced are 240 ml each, but all quantities are provided in grams for precision. Adjust sweetness and texture based on preference as this is a flexible dish.
