Brazilian Sweet Canjica Pudding

Ingredients

  • 500 grams canjica
  • 2 liters water
  • 1 liter milk
  • 1 cup sugar (180 grams)
  • 8 cloves
  • 1 cinnamon stick
  • 1 can condensed milk (395 grams)
  • 1 can heavy cream (200 grams)
  • 50 to 100 grams shredded coconut
  • 6 to 8 tablespoons powdered milk
  • 5 to 6 paçocas

Preparation

  1. Rinse the canjica under cold water.

  2. In a large pot, combine canjica, water, cloves, and cinnamon stick. Bring to a boil, then reduce heat and simmer until canjica is tender, about 1-2 hours.

  3. Add milk, sugar, condensed milk, and powdered milk. Stir well and continue simmering, stirring occasionally, until the mixture thickens.

  4. Mix in shredded coconut and heavy cream. Cook for an additional 5-10 minutes until creamy and well combined.

  5. Remove from heat. Crush paçocas and stir in or use as a topping before serving.

Tips

  1. The cups referenced are 240 ml each, but all quantities are provided in grams for precision. Adjust sweetness and texture based on preference as this is a flexible dish.
