Baked Apples with Vanilla Curd and Crumble
Ingredients
- 2 apples
- gingerbread spice
- lemon juice
- 200 ml evaporated coconut milk
- sweetener
- pinch of turmeric
- vanilla flavor
- 2 teaspoons starch
- splash of milk
- oats
- dates
- splash of plant milk
- gingerbread powder
Preparation
Hollow out 2 apples and sprinkle them with gingerbread spice and lemon juice.
For the curd, add 200 ml evaporated coconut milk to a pan, along with some sweetener, a pinch of turmeric, vanilla flavor, 2 teaspoons starch, and a splash of milk. Heat it up and use it to fill the apples.
For the crumble, blend oats with dates, a splash of plant milk, and gingerbread powder until you get a sticky dough.
Place the crumble on top of the apples and bake the entire dish at 160 degrees Celsius for about 20 minutes.
Notes
Extra curd may be served alongside the baked apples.
