Magic Cookies with Cashews and Coconut

Ingredients

  • 1 1/2 cups cashews
  • 1 1/2 cups unsweetened coconut flakes
  • 3/4 cup chocolate chips
  • 3-4 graham crackers, crushed
  • 3/4 can (11-12 oz) coconut condensed milk

Preparation

  1. Preheat oven to 350F.

  2. In a bowl, mix together all of the ingredients and coat well with the coconut condensed milk.

  3. Make large spoonfuls of the mixture on a parchment-lined baking sheet, ensuring to give ample room because the coconut condensed milk spreads.

  4. Bake for 15-16 minutes until golden.

  5. Remove from the oven.

  6. If the coconut milk has spread, take a spoon and gently push it towards the cookie.

  7. Do not touch the cookies for 10 minutes or so to let them cool so the condensed milk hardens.

  8. Then gently pick up your cookies and enjoy.
