Baked Scallion (Green Onion) Bread
Ingredients
Dough
- 245g bread/all-purpose/spelt flour, plus more for dusting
- 1 teaspoon baking powder
- A pinch of salt
- 1 tablespoon sugar
- 1 teaspoon active dry yeast
- 2/3 cup warm water
- 1/2 tablespoon vegan butter, softened
- Melted vegan butter for brushing
- Sesame seeds for toppings
Scallion mixture
- 10 stalks of scallions, chopped
- 2 tablespoons flour
- 1 teaspoon salt
Preparation
Place sugar, warm water, and yeast in a cup and let it sit for 5 minutes.
In a bowl of a stand mixer, combine the flour, baking powder, salt, and sugar for the dough.
Add in the yeast mixture and knead into a shaggy dough using the dough hook attachment.
Fold in the softened vegan butter and knead until incorporated.
Cover the dough and let it rise until it doubles in size.
Heat 3 tablespoons of oil in a pot until bubbles form around the chopsticks (about 160F) and slowly pour into the scallion mixture. Mix until well combined, then set aside.
Preheat the oven to 375F and lightly grease a baking sheet pan.
Punch down the risen dough and transfer it to a clean surface.
Divide the dough into 4 equal portions and roll each one into a 10" circle.
Place one circle of dough onto the prepared baking sheet and spread 1/3 of the scallion mixture on top.
Place a second circle of dough on top of the scallion mixture and repeat the layering process until the last layer of dough is added.
Brush the top with melted vegan butter and sprinkle sesame seeds on top.
Bake in the preheated oven for a certain duration until the bread is golden and cooked through.
