Cacao Chia Goji Breakfast Cookies

Ingredients

  • 2 ripe bananas
  • 1/4 cup oat milk
  • 2 Tbsp almond butter
  • 1 cup oats
  • 2 Tbsp chia seeds
  • 1 Tbsp cacao powder
  • 1/3 cup goji berries

Preparation

  1. Preheat oven to 350°F.

  2. In a mixing bowl, mash two ripe bananas. Add the oat milk and almond butter, and mix well.

  3. Add the oats, chia seeds, cacao powder, and goji berries. Stir until well incorporated.

  4. Line a baking sheet with parchment paper and lightly oil it. Form 8-10 cookies depending on size and bake for 18-20 minutes.

  5. Let the cookies cool and enjoy.
