Banana Oatmeal Cookies with Quinoa and Chia

Ingredients

  • one firm banana
  • 80 grams oats
  • 20 grams quinoa puffs
  • chia egg

Chia egg preparation

  • 1 tablespoon chia seeds
  • 1 cup water

Preparation

  1. Mash one firm banana.

  2. Add 80 grams of oats and 20 grams of quinoa puffs.

  3. Add the chia egg.

  4. Combine everything well and form into cookies.

  5. Bake at 180°C for 12 minutes.

Notes

  1. Measurements are approximate; add more oats if the mixture is too liquid.

  2. Chia egg is a binding agent used instead of eggs and is made by soaking 1 tablespoon of chia seeds in 1 cup of water for 2 hours. Flaxseeds can be used as an alternative.
