Soft Baked Protein Bars

Ingredients

  • 1/2 cup mashed banana
  • 1/2 cup almond butter (the runny kind - I use @99th_monkey smooth)
  • 3 tbsp maple syrup
  • 1 cup oats
  • 1/2 cup almond flour
  • 1/2 cup vanilla vegan protein powder
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup vegan dark chocolate (chips or chopped bar)

Topping

  • 1/3 cup dark chocolate + 2 tbsp almond butter

Preparation

  1. Preheat your oven to 350 and line an 8x8 baking pan with parchment paper.

  2. In a large bowl add your wet ingredients and mix.

  3. Then add the dry ingredients and mix well.

  4. Fold in your chocolate chunks.

  5. Press flat into your pan.

  6. Bake for 17 minutes.

  7. Remove from the oven and let cool.

  8. Once cooled, melt your chocolate in a dish.

  9. Then add the almond butter and stir together.

  10. Pour over the bars and spread evenly.

  11. Place in the fridge until hardened.

  12. Remove and slice.

Tips

  1. These are perfect to pack in a lunch bag or to keep on hand for a nutrient dense snack.

  2. Pairing one with some fruit and yogurt would also be a great breakfast option.
