Homemade Vegan Chickpea Protein Bars

Ingredients

  • 1 can chickpeas
  • 70g vanilla protein powder
  • 1/4 cup almond butter (or any other nut butter)
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 30g chocolate chips

Preparation

  1. Drain and rinse the chickpeas from the can.

  2. In a mixing bowl, combine the chickpeas, vanilla protein powder, almond butter, maple syrup, and vanilla extract.

  3. Mash or blend the mixture until it forms a thick, uniform dough.

  4. Stir in the chocolate chips until evenly distributed.

  5. Press the mixture firmly into a lined baking dish or shape into bars.

  6. Refrigerate for at least 1 hour to set, or bake at 350°F for 15-20 minutes if a firmer texture is desired.
