Chocolate and Blackberry Baked Oats
Ingredients
- 100g (1 cup) oats
- 4 tbsp any plain, vanilla or choc yoghurt
- 2 handfuls fresh or frozen blackberries
- 1 tsp baking powder
- 1 tbsp cocoa powder or drinking chocolate
- 8 tbsp boiling water
- 2 tbsp powdered sweetener, sugar, or maple syrup
Preparation
Pre-heat your oven to 200C/400F/gas mark 6.
Put boiling water and oats in a bowl and stir with a spoon to combine.
Leave aside for five minutes to thicken.
Add all of the other ingredients into the bowl and stir with a spoon to combine.
Pour the mixture into a shallow oven-proof dish lined with baking paper or parchment.
Bake in the oven for around 30 minutes. It should be crisp on the outside and soft, but not gooey, in the middle. Oven times do vary, so check on it after 30 minutes.
Serve on its own or with additional yoghurt and fruit. It can be eaten straight away or the following day cold or warmed up.
