Creamy Pumpkin Cookie Dough and Cream
Ingredients
Cookie dough
- 160g white beans out of the can
- 10g vanilla protein powder (or 1 knife point vanilla extract)
- 0.5 tsp psyllium husks (optional)
- 2 tbsp water
- 60g puréed pumpkin
- Cinnamon, cardamom, ginger
- Cocoa nibs or chopped chocolate
Cream
- 125g soy yogurt
- 1 tbsp maple syrup
- Cinnamon
Preparation
Purée the beans with water, then add puréed pumpkin, psyllium husks, protein powder, syrup, spices, and cocoa nibs
Mix syrup, cinnamon, and yogurt and enjoy with the cookie dough
