Dense Bean Salad with Protein and Crunch

Ingredients

  • 1 small onion, chopped
  • 1 sliced green onion
  • 1 large roasted pepper
  • Handful of chopped coriander, about 20-30g
  • 1 chopped red chilli pickle
  • Seasoning: 1.5 tsp salt and pepper, 1 tsp sweet paprika, 1 tsp parsley
  • 1 can chickpeas
  • 1 can white bean cannellini beans
  • 1/4 cucumber, sliced
  • Handful of pomegranates

Dressing

  • 1 lemon juice and zest
  • 1 tsp garlic
  • 1 tbsp pomegranate vinaigrette
  • 2 tbsp olive oil
  • 1 tsp mustard
  • 1/2 tsp salt

Preparation

  1. Place chopped onion in a bowl and sprinkle with salt while preparing the remaining vegetables.

  2. Add spring onion, beans, sliced peppers, and coriander to the bowl.

  3. Mix the dressing in a separate container.

  4. Pour the dressing over the salad and mix thoroughly.

  5. Taste and adjust seasoning with additional salt if needed.
