Flavorful Tofu and Eggplant Delight
Ingredients
- 1 eggplant
- 250g firm tofu
- 2-3 portions rice
- Spring onion
- Sesame seeds
- Sea salt
Marinade
- 3 tbsp hoisin sauce
- 2 tbsp water
- 3 garlic cloves, minced
- 1 tbsp sesame seeds
- 1/2-1 tsp chili flakes
- 1/4 tsp ginger powder
- 4 tbsp soy sauce
- 2 tbsp oil
- 1 tbsp apple cider vinegar
- 1.5 tbsp syrup
Preparation
Wash the eggplant and cut it into cubes. You can choose to salt it in advance (i.e., pour salt over the eggplant, let it sit for 1 hour, then pat away the salt and water). This step is optional.
Place the diced eggplant and tofu in a large bowl.
In a smaller bowl, mix together the marinade ingredients. Pour the marinade over the eggplant and tofu, and mix well. Allow it to marinate for at least 1 hour or overnight for fuller flavor.
Once marinated, roast the eggplant and tofu in an air fryer at 200°C for about 20 minutes. Note: Save some marinade to pour on top once cooked.
While roasting, cook the rice according to the instructions.
If you don't have an air fryer, you can roast in the oven at 200°C for about 25-30 minutes, until the eggplant is fully roasted and the tofu is baked.
Once done, serve the rice and eggplant-tofu mixture, topping it with chopped spring onion and roasted sesame seeds.
