Green Goddess Chickpea Salad Wrap
Ingredients
Salad mixture
- 1 can chickpeas, drained and rinsed
- 2 celery stalks, finely chopped
- 2 green onions, finely chopped
- 1 garlic clove, minced
- 1/4 cup dill pickles, finely chopped
Dressing
- 1/4 cup packed basil
- 1/4 cup parsley
- 1/4 cup vegan mayonnaise
- 1/4 cup vegan sour cream
- 2 tablespoons water
- 2 tablespoons tahini
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- Sea salt and black pepper, to taste
Preparation
Mash the chickpeas in a mixing bowl using a potato masher or the back of a fork
Add the chopped celery, green onions, pickles, and garlic to the mashed chickpeas and mix well
In a blender, combine the dressing ingredients until smooth
Add the dressing to the chickpea mixture and stir to combine
Wrap the mixture in lavash and top with waffle-cut cucumbers
