Green Goddess Chickpea Salad Wrap

Ingredients

Salad mixture

  • 1 can chickpeas, drained and rinsed
  • 2 celery stalks, finely chopped
  • 2 green onions, finely chopped
  • 1 garlic clove, minced
  • 1/4 cup dill pickles, finely chopped

Dressing

  • 1/4 cup packed basil
  • 1/4 cup parsley
  • 1/4 cup vegan mayonnaise
  • 1/4 cup vegan sour cream
  • 2 tablespoons water
  • 2 tablespoons tahini
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • Sea salt and black pepper, to taste

Preparation

  1. Mash the chickpeas in a mixing bowl using a potato masher or the back of a fork

  2. Add the chopped celery, green onions, pickles, and garlic to the mashed chickpeas and mix well

  3. In a blender, combine the dressing ingredients until smooth

  4. Add the dressing to the chickpea mixture and stir to combine

  5. Wrap the mixture in lavash and top with waffle-cut cucumbers
