High-Vibe Salad with Seed Dressing

Ingredients

  • big handful of romaine lettuce
  • big handful of organic field lettuce
  • half of a red onion, chopped in rings
  • 2 plum tomatoes, chopped
  • quarter of a cucumber, chopped
  • 1 small red bell pepper, chopped
  • 2 sundried tomatoes, chopped
  • 1 avocado, chopped
  • half a cup of organic alfalfa sprouts
  • small handful of walnuts
  • 2 brazil nuts
  • cayenne pepper
  • dried nori, wakame and dulse

Dressing

  • quarter cup of sunflower seeds
  • quarter cup of hemp seeds
  • half a zucchini
  • half a lime, juiced
  • 1 stalk of spring onion
  • 3 tbsp. sea moss gel
  • 1/4 tsp. of onion powder
  • 1/4 tsp. of cayenne pepper
  • 1/4 tsp. of sea salt
  • half a cup of spring water and more if needed

Preparation

  1. Layer the greens in a salad bowl, starting with romaine and field lettuce and building up to the red onion, plum tomato, cucumber and bell pepper.

  2. Add the alfalfa sprouts and mix around until everything is well combined.

  3. Now layer with the sundried tomatoes and walnuts.

  4. Spoon out the avocado and add it on the side.

  5. Add the homemade dressing and sprinkle the cayenne pepper and seaweed on top.

Dressing

  1. Add all the ingredients to a high powered blender or use an immersion blender until smooth.

  2. Make adjustments to your liking and store in an airtight container in the fridge for up to 2 days.
