Indonesian Young Jackfruit Curry
Ingredients
- young jackfruit, cut into pieces and boiled
- thick coconut milk as needed
- water as needed
- oil for sautéing
Ground spices
- 13 bird's eye chilies
- 5 shallots
- 4 garlic cloves
- 3 candlenuts
- 1 teaspoon coriander powder
- salt, sugar, and seasoning to taste
Additional spices
- 3 bay leaves
- 3 kaffir lime leaves
- 1 lemongrass stalk, bruised
- 1 inch galangal, smashed
Preparation
Heat oil and sauté the ground spices until fragrant.
Add the additional spices.
Add the young jackfruit, stir, and then add water as needed.
Wait until it boils, then add thick coconut milk.
Cook until done and flavors are absorbed. Adjust seasoning and serve.
