Moist Christmas Spiced Fruit Sponge Cake

Ingredients

  • Zest from 1 orange
  • 1/3 cup olive oil
  • 1/2 cup non-dairy milk and 1 tsp cider vinegar
  • 1/4 cup coffee
  • 1 tsp Spice
  • 1/2 cup South African raisins
  • 1 1/3 cup self-raising flour
  • 3/4 cup sugar
  • 1/3 cup pistachios

Preparation

  1. Preheat your oven to 180°C and line a cake tin with baking paper.

  2. Cream the sugar and oil together, then whisk through the milk mixture.

  3. Fold in your dry ingredients, then add the raisins and pistachio nuts.

  4. Bake in the oven for 35 minutes, or until completely cooked through.

  5. Allow to cool and decorate to your liking.
