Pecan Granola Tartlets with Cinnamon Apples
Ingredients
- 1/2 cup pecans
- 1/2 cup oats
- 1/2 cup almonds
- 1/4 teaspoon sea salt
- 2 tablespoons coconut oil
- 2 tablespoons maple syrup
- 1-3 tablespoons water
- 2 chopped apples
- 2 tablespoons maple syrup
- 1 teaspoon cinnamon
Preparation
Blitz pecans, oats and almonds in a food processor until broken into very small pieces
Add salt, coconut oil and maple syrup and blend again until well combined
Keep the blender going while slowly adding water, tablespoon by tablespoon, until the dough comes together and you can form a ball easily
Press the dough into the bottom of 3 or 4 silicone tartlet molds depending on the size
If using metal molds, line them with strips of parchment paper so you can remove the crusts easily
Bake at 180C for 12 minutes or until golden brown
Let cool completely before removing from the molds
Prepare the apple filling by cooking 2 chopped apples with 2 tablespoons of maple syrup and a teaspoon of cinnamon until soft
Fill cooled crusts with cooked apples and drizzle with peanut butter caramel
