Plant-Based Gluten-Free Buffalo Chickpea Burgers

Ingredients

  • 1 small onion
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 shredded carrot
  • 2 cloves garlic
  • 3 cups cooked chickpeas (or 2 cans, drained)
  • 1/2 cup hot sauce
  • 1 cup cooked quinoa
  • 1 tablespoon ground flaxseeds
  • 3 tablespoons water
  • 1/4 cup arrowroot starch
  • Additional salt to taste
  • Olive oil for cooking

Preparation

  1. In a skillet, sauté one small onion (diced) with 1 tsp salt in 1 tbs olive oil over medium heat for 8 minutes

  2. Add 1 shredded carrot and 2 cloves roughly chopped garlic; sauté for another couple of minutes

  3. Mash the onion mixture with 3 cups cooked chickpeas until a smooth-but-textured batter is formed

  4. Add 1/2 cup hot sauce and 1 cup cooked/cooled quinoa; stir to combine

  5. In a small bowl, combine 1 tbs ground flaxseeds with 3 tbs water; allow to sit for 5 minutes; stir the “flax egg” into the chickpea mixture

  6. Stir in 1/4 cup arrowroot starch; season with salt to taste

  7. Form into 4 patties; brown the patties in a skillet with olive oil over medium heat for 3-5 minutes per side

  8. Bake in a 375 degree oven for 8 minutes
