Quick and Easy Strawberry Scones

Ingredients

  • 175g self raising flour (or 175g all purpose flour plus 1 tsp baking powder)
  • 2 tbsp plain or vanilla yoghurt (plus extra for brushing)
  • 7 tbsp fizzy water or diet lemonade
  • 5 chopped strawberries
  • 1 tsp strawberry jam

Preparation

  1. Preheat oven to 200°C fan/425°F/gas mark 7.

  2. Put all ingredients except strawberries into a bowl and stir with a spoon until the mixture becomes a dough, then fold in the strawberries.

  3. Spoon the mixture onto a baking tray into four round portions.

  4. Flatten the tops and brush with extra yoghurt.

  5. Oven bake for 12-15 minutes.

  6. Best eaten straightaway.

Tips

  1. For a vegan version, use dairy-free yoghurt.

  2. For a gluten-free version, use gluten-free flour and add 1/2 teaspoon xanthan gum.
