Quick and Easy Strawberry Scones
Ingredients
- 175g self raising flour (or 175g all purpose flour plus 1 tsp baking powder)
- 2 tbsp plain or vanilla yoghurt (plus extra for brushing)
- 7 tbsp fizzy water or diet lemonade
- 5 chopped strawberries
- 1 tsp strawberry jam
Preparation
Preheat oven to 200°C fan/425°F/gas mark 7.
Put all ingredients except strawberries into a bowl and stir with a spoon until the mixture becomes a dough, then fold in the strawberries.
Spoon the mixture onto a baking tray into four round portions.
Flatten the tops and brush with extra yoghurt.
Oven bake for 12-15 minutes.
Best eaten straightaway.
Tips
For a vegan version, use dairy-free yoghurt.
For a gluten-free version, use gluten-free flour and add 1/2 teaspoon xanthan gum.
