Refreshing Vegan Watermelon Mousse Dessert
Ingredients
- 1 small watermelon
- 1 cup coconut milk
- 3 Tbsp vegan gelatin
Preparation
Cut the top of the watermelon and scoop out the inside.
Blend the scooped out watermelon without adding water and keep 2 cups in the blender, reserving the rest for other use.
Add 1 cup of coconut milk and 3 tablespoons of vegan gelatin to the blender and blend again.
Pour the mixture back into the hollowed out watermelon shell and refrigerate for at least 3 hours or until firm.
Turn the watermelon upside down, slice, and serve.
