Refreshing Vegan Watermelon Mousse Dessert

Ingredients

  • 1 small watermelon
  • 1 cup coconut milk
  • 3 Tbsp vegan gelatin

Preparation

  1. Cut the top of the watermelon and scoop out the inside.

  2. Blend the scooped out watermelon without adding water and keep 2 cups in the blender, reserving the rest for other use.

  3. Add 1 cup of coconut milk and 3 tablespoons of vegan gelatin to the blender and blend again.

  4. Pour the mixture back into the hollowed out watermelon shell and refrigerate for at least 3 hours or until firm.

  5. Turn the watermelon upside down, slice, and serve.
