5-Ingredient White Chocolate Almond Cups

Ingredients

  • 100g almond flour
  • 75g pitted dates
  • 75g dairy free white chocolate
  • 50ml melted coconut oil
  • 25g shredded coconut

Preparation

  1. Add all the ingredients except the white chocolate to a blender and blitz until well combined. You may have to stop and scrape down the sides a few times.

  2. Once a sticky, dough-like consistency has formed, scrape the mixture out of the blender and divide it into six chunks.

  3. Press each chunk down into a hole in a silicone muffin tray, really packing it down tightly using the back of a spoon.

  4. Melt the white chocolate and, once melted, divide it evenly across the top of the cups.

  5. Pop the cups in the freezer to set for a minimum of one hour.
