Smoky Spanish Tofu Vegetable Stir-Fry
Ingredients
- 2 spring onions chopped
- 2 garlic cloves chopped
- 1 large courgette chopped
- 200g mushrooms chopped
- 1 red pepper chopped
- 1 carrot cubed
- Handful of olives
- Handful chopped cherry tomatoes
- 300g tofu (pre pack smoked) chopped into cubes
- 2 tbsp smoked paprika
- 2 tsp mixed herbs
- 1 red chilli finely chopped
- Handful of fresh parsley chopped
- 1/4 cup coconut milk
- Salt (to taste)
Preparation
Add the onion and garlic to a pan with a little olive oil on a medium heat and cook for 2 to 3 minutes.
Add in the remaining ingredients except the parsley and coconut milk.
Allow to cook down for 8 to 10 minutes.
Add the coconut milk, stir through the parsley and give it all a good stir.
Serve with Spanish grains and rice and fresh rocket, topped with extra fresh parsley.
