Smoky Spanish Tofu Vegetable Stir-Fry

Ingredients

  • 2 spring onions chopped
  • 2 garlic cloves chopped
  • 1 large courgette chopped
  • 200g mushrooms chopped
  • 1 red pepper chopped
  • 1 carrot cubed
  • Handful of olives
  • Handful chopped cherry tomatoes
  • 300g tofu (pre pack smoked) chopped into cubes
  • 2 tbsp smoked paprika
  • 2 tsp mixed herbs
  • 1 red chilli finely chopped
  • Handful of fresh parsley chopped
  • 1/4 cup coconut milk
  • Salt (to taste)

Preparation

  1. Add the onion and garlic to a pan with a little olive oil on a medium heat and cook for 2 to 3 minutes.

  2. Add in the remaining ingredients except the parsley and coconut milk.

  3. Allow to cook down for 8 to 10 minutes.

  4. Add the coconut milk, stir through the parsley and give it all a good stir.

  5. Serve with Spanish grains and rice and fresh rocket, topped with extra fresh parsley.
