Vegan Dark Chocolate Oatmeal Cookie Bars
Ingredients
- 350g old fashioned oats
- 140g all-purpose flour
- 140g white whole wheat or whole wheat pastry flour
- 85g light brown sugar
- 100g granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 225ml The Groovy Food Company Organic Coconut Oil
- 2 bananas
- 1 tablespoon vanilla extract
- 240g dark vegan chocolate chunks
Preparation
Preheat the oven to 180C and grease a 9x13 inch baking dish with butter or line with parchment paper.
In a large mixing bowl or the bowl of a stand mixer, mix the oatmeal, flour, whole wheat flour, brown sugar, granulated sugar, baking soda, salt, coconut oil, bananas and vanilla, then beat until the dough is moist and all the ingredients are combined; the dough will be crumbly, so mix in the chocolate chunks.
Press the dough into the prepared baking dish, transfer to the oven and bake for 18-20 minutes or until the edges are set and the bars are golden, then sprinkle with flaky salt if desired, let cool and cut into bars.
