Vegan Fajita Vegetable Bowl

Ingredients

  • Red pepper
  • Tofu
  • Fajita seasoning
  • Paprika
  • Garlic salt
  • Courgette
  • Aubergine
  • Red onion
  • Chickpeas
  • Avocado (1/2)
  • Caramelised onion hummus
  • Sweetcorn
  • Spinach

Preparation

  1. Fry tofu and red pepper with fajita seasoning, paprika, and garlic salt until cooked.

  2. Heat leftover sautéed courgette, aubergine, red onion, and chickpeas in the same pan.

  3. Mash half an avocado.

  4. Assemble all components in a bowl along with caramelised onion hummus, sweetcorn, and fresh spinach.
