Vegan Gnocchi Mushroom Avocado Bowl

Ingredients

  • Trader Joe's cauliflower gnocchi
  • Mushroom
  • Onion
  • Cherry tomatoes
  • Spinach
  • Avocado
  • Olive oil
  • Garlic powder

Preparation

  1. Cook gnocchi stovetop in olive oil, skipping the nutritional yeast step

  2. Place cherry tomatoes in a baking dish, drizzle with olive oil, and bake at 400°F for 30-40 minutes, moving them halfway through

  3. Cut onion and steam with mushrooms in a pan with a splash of water until tender

  4. Add olive oil and garlic powder to the onion and mushrooms, then sauté

  5. Add spinach and cook until wilted

  6. Serve everything with mashed avocado

Notes

  1. Cauliflower gnocchi from Trader Joe's is vegan and can be used in place of stuffed gnocchi
