Vegan Gnocchi Mushroom Avocado Bowl
Ingredients
- Trader Joe's cauliflower gnocchi
- Mushroom
- Onion
- Cherry tomatoes
- Spinach
- Avocado
- Olive oil
- Garlic powder
Preparation
Cook gnocchi stovetop in olive oil, skipping the nutritional yeast step
Place cherry tomatoes in a baking dish, drizzle with olive oil, and bake at 400°F for 30-40 minutes, moving them halfway through
Cut onion and steam with mushrooms in a pan with a splash of water until tender
Add olive oil and garlic powder to the onion and mushrooms, then sauté
Add spinach and cook until wilted
Serve everything with mashed avocado
