Vegan Orange Chocolate Cake with Coconut Chocolate Cream Frosting
Ingredients
- 2 cups whole grain spelt flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup olive oil
- 1-1/2 cups soy milk or almond milk
- 1/3 cup orange juice or 1 tsp orange essence
- 3 tbsp cacao powder
- 1 cup raw sugar or coconut sugar
Coconut Chocolate Cream Frosting
- 1 can coconut cream
- 1 tsp vanilla extract
- 3 tbsp maple syrup
- 2 tbsp cacao powder
Preparation
Preheat the oven to 280°F (180°C).
In one bowl, sift together the spelt flour, baking powder, and baking soda.
In another bowl, mix together the olive oil, soy milk, orange juice or essence, and raw sugar.
Add the wet mixture into the dry mixture and fold the ingredients together. Be careful not to overmix.
Transfer the cake batter into a baking tin.
Bake for 40 to 45 minutes or until the cake is completely cooked. Use a toothpick inserted into the center to check for doneness.
Once the cake has cooled down, spread the coconut chocolate cream frosting on top.
Decorate the cake with sugar-dipped caramelized orange slices.
