Vegan Quinoa Stuffed Zucchini Boats

Ingredients

  • 2 medium zucchinis
  • 1 cup cooked quinoa
  • 1/2 cup black beans
  • 1/2 cup corn kernels
  • 1/2 cup bell peppers
  • 1/4 cup tomatoes
  • 1/4 cup red onions
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1/4 cup vegan cheese
  • Fresh cilantro

Preparation

  1. Preheat oven to 375°F.

  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.

  3. Mix the quinoa, black beans, corn kernels, bell peppers, tomatoes, red onions, garlic, cumin, chili powder, salt, and pepper in a bowl.

  4. Stuff the mixture into the zucchini boats.

  5. Sprinkle the stuffed boats with vegan cheese.

  6. Bake for 20-25 minutes until the zucchini is tender.

  7. Garnish with fresh cilantro and serve.
