Vegan Tuna Salad with Chickpeas and Jackfruit
Ingredients
- 1 sheet of nori, blitzed up
- 1/2 can of chickpeas
- 1/2 cup jackfruit
- 1 tbsp vegan mayo
- ~1/2 tbsp dark soy sauce
- tsp of mustard
- pinch of salt & garlic powder
- squeeze of lemon / 1/2 tbsp caper brine (for a fishier taste)
- Sweetcorn and red onion (to taste)
- Optional: olives, pickles, other vegetables
Preparation
Blitz the nori, chickpeas, jackfruit, vegan mayo, dark soy sauce, mustard, salt, garlic powder, and lemon/caper brine in a food processor until well combined.
Adjust the quantities of ingredients to achieve the desired taste and consistency.
Add sweetcorn and red onion (and any other optional ingredients) to the mixture and stir to combine.
Spread the vegan tuna mixture on a toasted bagel, in a pita, or use it in a salad.
