Anna Pavlova Meringue Dessert

Ingredients

  • 4 warm egg whites
  • 300 grams powdered sugar
  • 2 tablespoons starch
  • 500 grams mascarpone
  • 500 grams cream
  • 150 grams condensed milk

Garnish

  • Fresh berries

Preparation

  1. Whip the egg whites into a foam, gradually adding the powdered sugar and whipping for 7 minutes, then add the starch and whip for another 3 minutes until a smooth mass is obtained.

  2. Preheat the oven to 180°C.

  3. Pipe the meringue onto parchment paper on a baking sheet.

  4. Bake at 95°C for 90 minutes, monitoring the first five minutes to ensure it does not yellow and lowering the temperature if necessary, and do not open the oven during the process.

  5. Turn off the oven and leave the meringue inside until it cools completely.

  6. Whip the mascarpone with the cream and condensed milk to prepare the cream.

  7. Spread the cream over the cooled meringue and decorate with berries.

Tips

  1. Ovens vary significantly, so adjust the temperature to prevent the meringue from yellowing.

  2. It is crucial not to open the oven during baking to avoid collapsing the meringue.
