Chocolate Cake with Lemon Mousse Filling

Ingredients

  • 4 eggs
  • 1 cup demerara sugar or xylitol/muscovado sugar
  • 1/2 cup coconut oil or melted butter
  • 1/2 cup hot water
  • 2 cups oat flour or rice flour
  • 1/2 cup cocoa powder
  • 1 tablespoon baking powder

Lemon mousse

  • 1 can condensed milk
  • juice of 1 lemon

Preparation

  1. Preheat oven to 180 degrees Celsius

  2. Grease a cake pan with butter and dust with cocoa powder

  3. Mix together eggs, sugar, coconut oil (or melted butter), and hot water in a large bowl

  4. Add oat flour (or rice flour), cocoa powder, and baking powder, and mix until well combined

  5. Pour the batter into the prepared pan

  6. Bake for 35 minutes or until a toothpick inserted comes out clean

  7. Let the cake cool completely

Lemon mousse

  1. Combine condensed milk and lemon juice in a medium bowl

  2. Beat until thick and consistent

Assembly

  1. Spread the lemon mousse evenly over the cooled cake
