Carrot Cake with Chocolate Icing
Ingredients
- 4 eggs
- 3 medium carrots
- 1 cup sugar
- 1/2 cup sunflower oil
- 2 cups flour
- 1 tablespoon baking powder
Preparation
In a blender, combine 4 eggs, 3 medium carrots, 1 cup sugar, and 1/2 cup sunflower oil and blend until smooth.
Transfer the mixture to a bowl and add 2 cups flour and 1 tablespoon baking powder, then mix well.
Pour the batter into a greased and floured pan and bake at 180Β°C.
Notes
The chocolate icing is a soft brigadeiro.
