Carrot Cake with Chocolate Icing

Ingredients

  • 4 eggs
  • 3 medium carrots
  • 1 cup sugar
  • 1/2 cup sunflower oil
  • 2 cups flour
  • 1 tablespoon baking powder

Preparation

  1. In a blender, combine 4 eggs, 3 medium carrots, 1 cup sugar, and 1/2 cup sunflower oil and blend until smooth.

  2. Transfer the mixture to a bowl and add 2 cups flour and 1 tablespoon baking powder, then mix well.

  3. Pour the batter into a greased and floured pan and bake at 180Β°C.

Notes

  1. The chocolate icing is a soft brigadeiro.
