Ripe Banana Cake with Caramel Topping
Ingredients
Dough
- 3 eggs
- 2 cups sugar
- 1 cup milk
- 1/2 cup oil
- 2 cups all-purpose flour
- 1 tablespoon baking powder
Topping
- 3/4 cup sugar
- 1/2 cup hot water
- 7 bananas
Preparation
Topping
In a saucepan, add sugar and cook until melted
Pour in hot water and stir until sugar dissolves
Let it thicken to a syrup and set aside
Dough
Blend eggs, sugar, oil, and milk in a blender
Gradually add flour and continue blending until smooth and homogeneous
Add baking powder and blend at the lowest speed
Assembly and baking
Grease a medium pan with margarine and flour
Pour the caramel and the bananas (sliced lengthwise) into the pan
Pour the batter over the bananas and caramel
Bake in a preheated oven at 180Β°C for about 30 minutes
Notes
The number of bananas varies according to the pan size
To add more flavor, you can also add 1 tablespoon of cinnamon to the batter
This cake is great for using ripe bananas
