Beetroot Raita with Yogurt and Fresh Fruits

Ingredients

  • 450g Greek yoghurt
  • 1/2 cup grated cucumber with skin
  • 1/2 cup pomegranate
  • 1/2 cup green grapes
  • 1/2 tspn ground cumin & coriander
  • 1/2 tspn salt
  • 1 cooked beetroot

Preparation

  1. add salt to the yoghurt and whisk

  2. add cumin powder

  3. blend a cooked beetroot using a little water and add to the yoghurt

  4. add grated cucumber

  5. slice grapes thinly and add

  6. add pomegranate

  7. mix and serve cold
