Caramelized Onion Hummus

Ingredients

  • 200 ml chickpea water⁣
  • 400g white onions (4-5 small ones)⁣
  • 20g brown sugar⁣
  • 45g tahini⁣
  • juice from 1 lemon⁣
  • 1 garlic clove
  • salt, pepper, cumin (optional)⁣
  • vegetable oil⁣
  • houmous aux oignons caramélisés⁣
  • 200ml chickpea water⁣
  • 400g oignons blancs (4-5 petits)⁣
  • 20g sucre brun⁣
  • 45g tahini⁣
  • jus d'un citron⁣
  • 1 gousse d’ail - sel, poivre, cumin (optional)⁣
  • huile végétale⁣

Preparation

  1. In a pan, add the thinly sliced onion with some oil and 2 pinches of salt

  2. Cook on medium heat for 10 minutes

  3. When it's soft and translucent, add the brown sugar and cook 15 more minutes

  4. You can put a lid on the pan to make them softer

  5. In a blender, add the chickpeas, the caramelized onion (keep 30g aside for topping), the tahini, lemon juice, 3-4 pinches of salt, and some ground black pepper

  6. Blend and add at the same time the chickpea cooking water. Blend until smooth. ⁣.⁣
