Carrot Noodles with Spicy Orange Almond Sauce
Ingredients
Sauce
- 1/4 cup almond butter
- 2 tbsp orange juice
- 1/2 tsp lime juice
- 1 tbsp tamari sauce
- 1/2 tsp fresh ginger
- 1 tsp maple syrup
- 1/4 tsp chili flakes
Carrot noodles
- 4 carrots
- 1 tbsp lemon juice
- 2 orange supremes
- 1 tbsp black sesame seeds
- A bunch of coriander or herbs of choice
Preparation
Prepare the carrot noodles: peel the carrots and spiraling them using a manual spiralizer or a food processor. Place the carrot noodles in a big bowl and add the lemon juice. Toss and set aside while you prepare the sauce (the lemon juice will help to prevent from oxydation).
Prepare the sauce: blend all the sauce ingredients in a high speed blender until completely smooth and lightly emulsified.
Assembly: divide the carrot noodles into two parts and place in two bowls. Spread the almond sauce over the carrots. Add the orange supremes, sprinkle the black sesame seeds, top with fresh coriander leaves.
