Cashew and Fig Lassi

Ingredients

  • 6 cashews
  • 4 figs or dried anjeer
  • 2 de-seeded soft dates
  • 2 cups fresh thick curd
  • 1 tsp cardamom powder
  • 1-2 ice cubes (optional)
  • Chopped mixed nuts for garnish

Preparation

  1. Soak the cashews, figs, and dates in warm water for at least 30 minutes.

  2. Drain the soaked ingredients and add them to a blender with the curd and cardamom powder.

  3. Blend until smooth and creamy.

  4. Add ice cubes if desired and blend again if necessary.

  5. Garnish with chopped mixed nuts.

  6. Serve chilled.

  1. This lassi is thick, creamy, and suitable for fasting or as a healthy drink option.
