Sugar-Free Gond and Mixed Nuts Paak

Ingredients

  • 4 tablespoons ghee
  • 1/4 cup edible gond
  • 1 cup mixed nuts (such as almonds, cashews, pistachios)
  • 1/4 cup shredded coconut (optional)
  • 2 tablespoons poppy seeds
  • 2 tablespoons dried ginger powder
  • 1 teaspoon cardamom powder
  • 1/2 teaspoon nutmeg powder
  • Ganthoda powder (optional)
  • 400 grams deseeded dates

Preparation

  1. Heat 4 tablespoons of ghee in a kadhai.

  2. Fry 1/4 cup of edible gond in the ghee on low to medium flame for about 10 minutes.

  3. Remove from heat, let it cool, and coarsely pound the gond.

  4. In the same kadhai, add 2 teaspoons of ghee and roast 1 cup of mixed nuts.

  5. Once mildly roasted, add 1/4 cup shredded coconut (optional) and 2 tablespoons poppy seeds; mix well.

  6. Turn off heat and let the mixture cool down.

  7. Coarsely chop the nut mixture, using a mixer on pulse mode if desired.

  8. Mix the chopped nuts with the pounded gond, and add 2 tablespoons dried ginger powder, 1 teaspoon cardamom powder, and 1/2 teaspoon nutmeg powder; Ganthoda powder can be added if desired.

  9. Mix everything well and set aside.

  10. In a kadhai, add 2 teaspoons ghee and 400 grams of deseeded dates.

  11. Cook on medium flame until the dates soften.

  12. Add the gond and nut mixture to the dates and mix well; this may take some time.

  13. Set the mixture in a greased tray and cut into pieces.

Tips

  1. Store in an airtight container at room temperature for up to a month.
