Sugar-Free Dates and Dry Fruit Rolls

Ingredients

  • 2 tsp poppy seeds
  • 3/4 cup mixed chopped dry fruits (almonds, pistachios, cashews, walnuts, or as per choice)
  • 1.5 cups soft seedless dates
  • 1 tsp ghee
  • 1 tsp honey
  • Cardamom powder from 2 pods
  • A pinch of salt

Preparation

  1. Heat up the pan, add 2 tsp poppy seeds, dry roast them and transfer to a bowl.

  2. Add 1/2 tsp ghee in the same pan and roast 3/4 cup mixed chopped dry fruits.

  3. Transfer the roasted dry fruits to another bowl.

  4. Add 1/2 tsp ghee in the same pan, add 1.5 cups soft seedless dates and cook for 7-10 minutes on medium flame.

  5. Keep stirring until dates become soft, then add a pinch of salt.

  6. Add cardamom powder from 2 pods.

  7. Turn off the stove and let it rest for a while.

  8. Add 1 tsp honey and 1 spoon of melted dates to the roasted dry fruits and mix well.

  9. Add the roasted poppy seeds to the dry fruits mixture.

  10. Place an aluminium foil sheet on a flat surface and grease it with ghee.

  11. Transfer the dates mixture onto it, apply some ghee, place a plastic wrap over it and flatten with a rolling pin.

  12. Roll it into a square shape by making it flat.

  13. Place the dry fruits mixture in the middle and roll it over.

  14. Cover it nicely from the edges and cut off any extra portion of dates.

  15. Spread some roasted poppy seeds and chopped pistachios on aluminium foil.

  16. Move the dates roll onto it, cover with aluminium foil and refrigerate for 10-15 minutes to firm up.

  17. Remove the roll from the refrigerator, cut it into small pieces with the foil on to help cutting, then remove the foil and place on a serving plate.
