Leftover Rice Halwa

Ingredients

  • 1 cup leftover rice
  • 1/2 cup grated coconut
  • 3/4 cup jaggery (or adjust to taste)
  • 2 tbsp ghee
  • 1/2 tsp cardamom
  • Nuts, optional

Preparation

  1. Blend rice and coconut together roughly.

  2. In a pan, melt jaggery with 2 tbsp water and strain.

  3. Add rice-coconut mix and jaggery syrup to a pan.

  4. Cook until thick and ghee separates.

  5. Add cardamom and roasted nuts.

  6. Set in a greased tray or serve as soft halwa.
