Leftover Rice Halwa
Ingredients
- 1 cup leftover rice
- 1/2 cup grated coconut
- 3/4 cup jaggery (or adjust to taste)
- 2 tbsp ghee
- 1/2 tsp cardamom
- Nuts, optional
Preparation
Blend rice and coconut together roughly.
In a pan, melt jaggery with 2 tbsp water and strain.
Add rice-coconut mix and jaggery syrup to a pan.
Cook until thick and ghee separates.
Add cardamom and roasted nuts.
Set in a greased tray or serve as soft halwa.
