Chewy Chocolate Chip Cookie Cakes

Ingredients

  • 1 egg replacer of choice
  • 1 1/3 cups flour of choice
  • 1/3 cup raw sugar
  • 3 tablespoons vegan condensed milk or additional liquid sweetener
  • 1 tablespoon liquid sweetener of choice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla essence
  • 1/2 tsp salt
  • 1/2 cup vegan chocolate chips
  • 1/4 cup non-dairy milk (adjust based on liquid sweetener)

Preparation

  1. Preheat oven to 180 degrees Celsius.

  2. Mix the dry ingredients and in a separate bowl mix the wet.

  3. Combine the two carefully.

  4. Add the chocolate chips.

  5. Roll into tablespoon sized balls and set on a baking tray.

  6. Bake for 7 to 10 minutes depending on texture. They are more cakey than cookie so keep this in mind. They will harden slightly when out the oven.
