Chocolate Chip Walnut Cookies

Ingredients

  • 1 cup + 3 tbsp spelt flour or whole wheat pastry flour (you can make these also with all-purpose flour)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup brown sugar or coconut sugar (I used coconut sugar)
  • 1/4 tsp salt
  • 1/3 cup maple syrup
  • 1 tsp blackstrap molasses
  • 1 1/2 tsp vanilla extract
  • 1/4 cup natural nut butter (I used peanut butter)
  • 1/3 cup dairy-free chocolate chips
  • 1/4 cup walnut pieces
  • 2 tbsp unsweetened almond milk

Preparation

  1. Set oven to 350°F (175°C).

  2. Spoon the flour into a measuring cup and sift this along with all other dry ingredients through a mesh strainer into a medium bowl.

  3. Add in maple syrup, almond milk, vanilla extract, blackstrap molasses, and peanut butter. Use a large spoon to combine the ingredients to form the dough.

  4. Fold in the walnut pieces and dairy-free chocolate chips.

  5. Grab a piece of dough and roll it into a dough ball using slightly damp hands. Repeat this step with the remaining dough.

  6. Place the dough balls on a lined baking sheet.

  7. Place the baking sheet in the oven for 9-10 minutes, until the cookies are baked.

  8. Remove the cookies from the oven and allow them to cool for 10 minutes before serving.
