Gooey Chocolate Chip Tahini Cookies
Ingredients
- 1 tbsp ground flaxseeds
- 3 tbsp water
- 1 cup + 2 tbsp (156 g) of flour
- 1/4 cup brown sugar (43 g)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp kosher salt
- 1/4 cup tahini
- 1/4 cup maple syrup
- 1 tsp blackstrap molasses
- 1 1/2 tsp vanilla extract
- 1/3 cup dairy-free chocolate chips or chocolate chunks
Preparation
Prepare flaxseed mixture
Mix ground flaxseeds and water in a small bowl, then set aside to gel for at least 5 minutes.
Preheat the oven
Set the oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Combine dry ingredients
In a mixing bowl, combine flour, brown sugar, baking soda, baking powder, and salt. Mix well.
Add wet ingredients
Add tahini, maple syrup, molasses, and vanilla extract to the dry ingredients.
Mix until a slightly sticky dough forms.
Fold in chocolate
Fold in the dairy-free chocolate chips or chocolate chunks.
Shape and place dough
Using a cookie scoop or tablespoon, portion out the dough onto the prepared baking sheet.
Roll the dough balls in your hands to smooth them and provide enough room for spreading.
Gently press down on each dough ball to encourage spreading.
Bake
Place the baking sheet in the preheated oven for 9-10 minutes.
Cool
Remove the cookies from the oven and allow them to cool completely before removing them from the baking tray.
