Chocolate Chip Oatmeal Bars
Ingredients
- 2 tbsp ground flaxseed
- 1/2 cup unsweetened almond milk
- 3 cups rolled oats
- 1/2 tsp salt
- 2 tsp baking powder
- 1 cup natural almond butter (creamy is best)
- 3/4 cup maple syrup
- 2 tsp vanilla extract
- 3/4 cup vegan chocolate chips/chunks
Preparation
Set the oven to 350°F (175°C).
In a bowl, combine ground flaxseed and almond milk. Allow the mixture to sit.
In a food processor, add 2 cups of rolled oats, baking powder, and salt. Process the ingredients into flour.
Add almond butter, maple syrup, flaxseed milk mixture, and vanilla extract to the food processor. Process on high until a thick batter forms.
Scrape down the sides of the processor and add the remaining oats and vegan chocolate chips. Pulse 4 or 5 times to combine.
Spoon the batter into an 8-inch by 8-inch baking pan lined with parchment paper.
Place the pan in the preheated oven and bake for about 25-30 minutes, until the bars are golden brown.
Remove the pan from the oven and let the bars cool for 10 minutes.
Carefully remove the bars from the pan and allow them to cool completely.
Use a sharp knife to cut the cooled bars into desired sizes.
